
Why not give this this delicious and nutritious recipe for a vegetable tagine a try? This recipe is packed with delicious and healthy vegetables and also contains chickpeas and green peas which are amazing sources of cholesterol lowering soluble fibre.
It gets even better – it is easy as there is literally only one step to making this amazing recipe – just keep adding the ingredients to a heated pan!
This recipe serves 4 and you will need the following ingredients:
● 2 tbsp olive oil
● 1 large onion finely chopped
● 2 courgettes diced
● 2 large tomatoes finely chopped
● spice mix – 1tsp each of ground coriander/cumin/cinnamon
● 400g tin chickpeas drained and rinsed
● 3 tbsp raisins
● 400 ml vegetable stock
● 250g fresh peas (frozen will do)
● a handful of chopped fresh coriander
How To Prepare
Heat the oil in a deep pan, add the onions and fry for about 5 mins until soft. Stir in the spice mix and then add the tomatoes, chickpeas, courgettes, raisins and stock then bring to the boil. Cover the pan and simmer on a reduced heat for about 10 mins. Add the peas at this point and cook for a further 5 mins. Garnish with the chopped coriander and serve.
