This delicious and nutritious soup is ideal for a healthy lunch and is particularly good for maintaining a healthy digestive system as it contains broccoli which supports a healthy digestive system through its fibre and antioxidant content and root ginger which improves your digestion by accelerating the digestive process and enhancing the function of digestive enzymes. Additionally, kale is a natural prebiotic that promotes the growth and development of essential good bacteria in the gut.

The recipe serves 2 and you will need the following ingredients:

● 500ml vegetable stock

● 1 tablespoon olive oil

● 3 garlic cloves thinly sliced

● 3cm piece of fresh ginger peeled and finely chopped

● 3cm piece of fresh turmeric peeled and grated

● 1 tsp ground coriander

● a pinch of sea salt

● 200g courgettes roughly sliced

● 100g broccoli

● 80g kale chopped

● 1 lime zested and juiced

● small pack of flat leaf parsley roughly chopped, leaving a few leaves to serve

How to prepare

  1. Heat the olive oil in a deep pan and add the ginger, turmeric, garlic and salt. On a medium heat fry for 2 minutes then add 3 tablespoons of water
  2. Add the courgettes, mix well and cook for 3 minutes. Add 400ml of the vegetable stock and simmer for 3 minutes.
  3. Add the kale, broccoli, lime juice and the remainder of the stock and cook for 3-4 minutes.
  4. Remove from the heat, add the chopped parsley and blend until smooth. Garnish with the lime zest and parsley leaves and serve.
