Try this delicious and nutritious recipe for vegetarian bean chili to maintain a healthy blood cholesterol level. Not only is it packed with healthy nutrients, it also contains lentils and kidney beans which are a rich source of cholesterol lowering soluble fibre. The cholesterol lowering doesn’t end there – root ginger is also part of this recipe!

This recipe serves 4 and you will need the following ingredients:

● 1 tbsp olive oil

● 2 cloves garlic finely chopped

● 3cm piece of root ginger finely chopped

● large onion finely chopped 

● 1 courgette diced

● 1 red & 1 yellow pepper de-seeded and chopped

● 125g red lentils rinsed & drained

● tbsp chili powder (or to taste)

● 2 tbsp tomato purée

● 2 tins chopped tomatoes

● 420g tin butter beans drained & rinsed

● 400g tin red kidney beans drained and rinsed

How To Prepare

  1. Heat the olive oil in a large pan then add the garlic, ginger, onion, courgettes and peppers and cook for about 5 mins until they start to soften. Add the chilli powder and cook for a further minute.
  2. Add the lentils, tomato purée, tomatoes and 250ml water, stir thoroughly and bring to the boil and then allow to simmer for 15 mins.
  3. Add the butter beans and kidney beans, and allow to cook for a further 10 mins. Serve and enjoy!
